Cornish Hen Recipe

My oldest son loves chicken and he do mean it’s his favorite food. He would rather have a roasted chicken than pizza for lunch. This week we are busy getting ready for our little girl’s arrival. My son craving a little more of mummy’s attention asked for a whole chicken. Now I know what you’re thinking a whole chicken! What he means is a Cornish Hen. I made this for him stuffed with rice and roasted green beans on the side and it quickly became one of his favorites. I normally don’t make this because it’s a little pricey but as luck would have it they were on sale this week. Below is my recipe and I hope you like it as much as my son does!

1 Cornish hen
½ cup rice not cooked fully
1 tsp butter
1 tsp dried dill
Salt and pepper

Cook rice that it is still chewy but not runny place in hen. Next place hen in a tray with rice around it. Place half butter under skin and test on top. Next add seasoning to top of hen. Bake in a 425 degree preheated oven for about 45 minutes to 1 hour. Enjoy with roasted green beans as a side.
