Wait there is a better option! Rotisserie Chicken! I have to say I used this on more than one occasion. Boil some rice and microwave some vegetables and your meal is complete. But.. what about leftovers? Recently we bought two rotisserie chicken and then had family bring over food for us after our daughter was born. With two chickens in the fridge and salad with chicken on it becoming more of a daily occurrence I then had to think of new creative ways to use up this chicken. Here comes spicy leftover chicken scarpariello. I have defiantly been wanting some spice back in my food after the hideous I had to take from it towards the end of my pregnancy. I hope you enjoy it as much as I did!
