We had a good turnout tonight at our Keep it Healthy for Life Fall Fling! We grilled up some foil packs full of chicken and vegetables as well as baked apples. Everything was a huge success! The foil packs were even great for participants that had celiac disease. Not cooking directly on the grill allowed these participants to enjoy in the fun! Below is the quick and easy recipe, you can even cook them in the oven!
4 chicken breasts, pounded thin
8 fingerling potatoes
2 onions quartered
2 carrots quartered
1 tbsp olive oil
Salt and pepper
Pound out chicken breasts, set aside. Slice potatoes lengthwise in half. Quarter carrots and onions. Evenly distribute potatoes and vegetables into 4 foil packs. Place chicken breast on top and drizzle olive oil and sprinkle with salt and pepper. Wrap up the foil packs by folding lengthwise and then fold the sides in. Cook on a well heated grill for 15 minutes or place in a 375 degree pre heated oven for 15-20 minutes.Enjoy!
