A New Gluten Free Recipe

I hope everyone had a great mother’s day! I know I did. In honor of celiac awareness month I wanted to do a post a week of a recipe that is gluten free. One recipe I did recently was Roasted Garlic cauliflower with a cheesy topping. My son thought this was delicious! In my opinion great side dish and 100% GF. Also a more natural food, which when going GF can be a bit difficult. I find myself daily reading labels, and trying to find a GF option that is more of a “real food”. Roasted Garlic Cheesy Cauliflower
1 head cauliflower
4 cloves roasted garlic
¼ cup cheddar cheese
1 tbsp coconut oil
Salt and Pepper to taste

Chop cauliflower and boil until fork tender. Drain cauliflower and place back in pot with garlic and coconut oil, mash together. Place in pyrex baking dish and layer cheese on top. Bake in a preheated 375 degree oven for 10-15 minutes.
