A Simple Salad

A simple salad that is the title of this blog post. Since it seems that everyone I encounter (myself included) is rushing around at dinner time. Work functions, kids activities everyone from every age group seems to keep dinner time the busy time. More and more people are neglecting that this meal should be nutritious and time spent with family discussing the day’s activities. This is where a simple salad comes in. Salad does not have to be difficult it can be simple, delicious and nutritious all at the same time.
Salad can also come in many forms you can chop up the vegetables yourself or get the salads that are already complete in the bags. Whatever your preference top with a protein source Chicken, tuna, beans, hard boiled egg. A little oil and vinegar and poof the salad is complete. A simple meal ready in minutes. If you want to get fancy try my recipe for homemade croutons. A great use for stale bread!

1 tsp pepper
1 Tbsp parsley
1 tbsp olive oil
2 tsp onion powder

Cut bread into chunks. Place in bowl. Add above herbs and oil and toss. Place in a preheated 350 degree oven for 15 minutes
