2 cans black beans drained and rinsed
1 cup corn
½ cup fresh cilantro roughly chopped
½ Vidalia onion diced
1 red pepper diced
½ cup cherry tomatoes halved
2 tbsp vinegar
1 tbsp olive oil
Salt and pepper to taste
Place all ingredients in a bowl mix together and place in refrigerator for one hour. Serve cold
