Celiac Awareness Month!

It’s Celiac awareness month and what better way to help people understand celiac disease is with an event today held at Nature’s Pantry. An estimated 1 and 133 americans have celiac disease. This disease can affect men and women of all ages and races. It is estimated that 83% of Americans who have celiac disease are undiagnosed. Celiac disease can lead to a number of other health issues including infertility, reduced bone density, neurological disorders, some cancers, as well as other autoimmune diseases.
To alleviate the symptoms of this disease the only remedy is a 100% Gluten free diet. We at digestive disease center know the importance of the diet in people with celiac disease. This is why throughout the month we are holding events and lectures to help spread the awareness of celiac disease.
Join us today May 7th at Nature’s Pantry in fishkill for a lecture on Gluten free and Healthy Eating. Our Registered dietitian will also share some gluten free recipes and give a food demonstration.
Missed May7th Join us on May 11th @5:30pm in our Fishkill office 400 Westage for another Gluten Free Lecture, where we will discuss label reading while on a GF diet.
May 22 is our Celiac Walk located on Walkway over the Hudson (Highland side) . There will be a number of different vendors to try their samples. Have a question with your celiac diet, join our registered dietitian as she walks and discusses this disease.

Look for these and other recipes throughout this month

Zucchini Pasta
2 Zucchini
2 tbsp coconut oil
3 tomatoes, diced
1 large onion, diced
2 cloves garlic minced
⅛ cup fresh basil, minced
⅛ cup fresh oregano, minced
Add beans or sausage for additional protein

Take your spiralizer and spiralize zucchini. In a pan heat oil and add onion, saute for one minute. Next add garlic and tomato saute for another 4 -5 minutes add in basil and oregano, cook for another 2 minutes. Lastly toss in the zucchini making sure the sauce coats thoroughly, cook for 2 minutes if you like a bite in your vegetables. Parmesan cheese for garnish.
