Chickpea Veggie Patties

I made these the other day and my kids loved them. They are packed with fiber and taste delicious as well. I would pair them with a yogurt dill sauce on a salad. I liked this recipe because you can add any veggies that you have on hand.

2 cans chickpeas drained and rinsed
2 Tbsp olive oil
1 ½ cups raw broccoli chopped
1 onions chopped
1 cup kale roughly chopped
2 cloves garlic minced
1 red pepper diced
2 Tbsp flour to bind
2 tsp cumin
1 tsp paprika
1 tsp chili powder
1 tsp turmeric
1 egg

Place on tablespoon olive oil in pan and heat. Add onion, garlic pepper,kale and broccoli and saute for 3-5 minutes. Set aside to cool. Next in a blender add chickpeas, olive oil and blend. Next add the veggie mixture and spices and pulse quickly ( I like to keep the veggies a little chunky). Place mixture in a bowl, add egg and flour. Mix well, shape into patties and bake in a preheated oven 450 degrees for 15-20 minutes.
