Coconut Apple cinnamon Muffins

Breakfast is always the meal that escapes me. My kids have never been big on waffles and pancakes. Most of the time they can take or leave cereal so what other items can we have? This weeks blog posts are going to be dedicated to finding items that are healthier as well as quick and easy to make for breakfast.
Today will be apple cinnamon muffins made with coconut flour. My husband thought the texture was off but I thought they were delicious. They were very easy to make, the hardest part was cutting up the apples.

1 apple diced and peeled
3 tbsp vegetable oil
3 eggs
1 tsp cinnamon
1 tsp baking powder
½ tsp almond extract
½ tsp vanilla extract
¼. cup brown sugar
¼ cup coconut flour

Mix all ingredients together except apples till very well blended. Fold in apples and scoop into muffin tins. Fill ¾ full and bake at 400 degrees for 16-18 minutes. These can be made paleo friendly by using honey instead of sugar and coconut oil instead of vegetable oil. Enjoy!
