Coconut Flour Pancakes

The one item I really miss for breakfast is pancakes and while I do make banana flourless pancakes once in awhile they are not like regular pancakes when you have a craving. I thought it was only fitting to write a recipe using coconut flour since our talk ester day was all about coconut flour.

4 eggs
1 tablespoon sugar
1tsp vanilla
¼ cup coconut flour
½ tsp baking powder
¼ cup coconut milk
3 tablespoons coconut oil or butter (coconut oil needs to be liquid)

Whisk eggs in bowl then whisk in vanilla, coconut milk, and coconut oil. In a separate bowl put in coconut flour and baking powder. Add wet ingredient to dry ingredients. Heat a skillet and grease well. Place flame on medium so as not to burn pancakes. Cook pancake for 1-2 minutes on each side. Enjoy!
