Fennel Salad Recipe

Fennel is a very underrated vegetable in my opinion. It has a slightly licorice taste and contains a crunch much like celery. It has been used in herbal medicine for tummy troubles. I however love fennel salad! And my one year old finds it just as appealing.That is why I thought I would share this fennel salad recipe with you.

1 head fennel, chopped

2 tbsp red wine vinegar

3 tbsp olive oil

1 tsp garlic powder

Salt and pepper to taste

This is a simple fennel salad, although there are many that are more complex this one is perfect for a quick side dish or lunch.
In a bowl place chopped fennel. In a small bowl place vinegar, olive oil, garlic powder salt and pepper. Whisk until combined, pour over fennel and enjoy. This keeps really well in the fridge for a few day so it is great to bring to work.
