Gluten Free Make Ahead Meals

Dinner meals can be tough to put on the table, add in being gluten free and it becomes increasingly difficult. This is why I say we need to take it a bite at a time! Instead of cooking a week’s worth of meals, cook 2-3 days. This will take less time and allow you to change meals around if you get bored. Tonight we prepared 3 gluten free meals that can be ready in less than an hour.

Gluten Free Philly Cheese Steak (this is low carb as well)
Grilled Chicken with Sweet Potatoes and Salad

Grilled Chicken and Sweet Potatoes

2 pounds Grilled chicken, sliced thin
2 sweet potatoes, peeled and cubed
Salt and pepper
1 Bag salad
Olive oil

First, let’s prepare our chicken. We will season chicken with salt and pepper and place on a preheated griddle cooking about 5 minutes on each side. While your chicken is cooking cube your sweet potatoes and drizzle with olive oil, salt and pepper. Place in a preheated 425 degree oven for 15- 20 minutes.
Add a bag salad to this dish (which I always keep on hand) and you have a complete healthy gluten free meal ready for yourself in less than 30 minutes.

Gluten Free Philly Cheese Steak

2 pounds thinly sliced beef
2 cups beef broth
2 onions sliced
4 red bell pepper
¼ pound cheese of choosing ( I like provolone)
2 tbsp cornstarch

Heat a skillet with about 2 tbsp olive oil. Add 2 pounds of thinly sliced beef and brown. Add 2 sliced onion and cook for about 5 minutes. Add 1 ¾ cups beef broth to pan, in a cup place ¼ cup of beef broth and 2 tbsp cornstarch, mix well to make slurry. Let cook on stove 3-5 minutes on low. While meat is half peppers taking seeds and veins out. Next place meat in a heated skillet with 2 tbsp olive oil. Brown meat and onions. Once browned add 1 ¾ cups beef broth and slurry. Cook until thickened and spoon into pepper halves. Place a piece of cheese on top and put into a preheated 375 degree oven. Cook for 10-15 minutes or until cheese is browned.

Instant pot pasta

1 pound ground turkey
1 tbsp olive oil
1 can diced tomatoes 24 oz
1 can 24 oz chicken broth
1 pkg your favorite gluten free pasta
1 tbsp oregano
1 tbsp basil
1 tbsp garlic powder
1 tbsp onion powder

Place instant pot on sauté setting. Heat olive oil and add ground turkey, brown. Next add tomatoes, chicken broth, spices and pasta. Turn setting to manual high pressure and set for 12 minutes. Allow natural release.
