High Fiber Quinoa Salad

Quinoa is a very versatile grain. I personally love cooking with this grain since it does take on the flavor of items it is cooked with. Quinoa is not only high in fiber but is also high in protein. Making a quinoa salad could be a nice refreshing twist to a hot summer night menu.

1 Cup cooked Quinoa
½ cup grape tomatoes halved
½ cup basil
½ cup oregano
3 Tbsp chives diced
1 cucumber seeded and diced
Juice and Zest of 1 lemon
2 tbsp olive oil
1 squash roasted and diced
Salt and pepper to taste

Add all ingredients in bowl and place n fridge for 30 minutes to cool and marinate together. Enjoy!
