Italian Crockpot Chicken

Dinners have been getting harder for us as a family. I know that for the most part I need them done ahead of time. With activities after school and all kids vying for attention there is not a lot of time when I get him from work to make meals. Today I came up with Italian Crockpot Chicken and it is gluten free! To add to my already hectic schedule I was trying to re-challenge wheat in my life which did not end well. Back to wheat free recipes for me. I hope you enjoy this recipe as much as we did!

5 Chicken thighs bone in
1 can crushed tomatoes
1 onion slices
1 zucchini diced
1 green pepper diced
3 cloves garlic minced
2 tsp Oregano
2 Cups raw spinach

In Crockpot place the above ingredients. Cook on low for 8 hours. Serve over rice noodles.
