Italian Sausage and Navy Bean Soup

  1. The air is still chilly and the snowy is still not thawed. Which means it’s still soup season! I made this the other night and was very surprised by the results. It is a hearty soup and great with some crackers or a piece of crusty bread.

1 pound Italian sausage
1 zucchini diced
2 carrots diced
3 stalks celery diced
1 onion diced
2 tomatoes diced
8 cups chicken broth
1 can navy beans rinsed
Pepper

Sauté sausage in the bottom of a Dutch oven or soup pot. Next add all veggies and cook for 5 minutes on medium heat. Let cook 1 hour. Enjoy! If you would like to add more fiber throw in some spinach or kale. Until next time enjoy this recipe and the ones you share it with.
