Italian Stuffed Peppers
It is my first week back to work after having my little Baby girl. I know I am going to miss her while I’m at work but we need to get back into our routine. In order to make sure that I have enough time for my kids when I get home from work I’m starting to do make ahead meals. These meals can be stored safely in the fridge and either cooked or reheated the next day. Last night I decided to put together Stuffed peppers.
Stuffed peppers can be made in a variety of different ways. Today I decided to have Italian Stuffed peppers. I was able to prep them the night before and they were ready to go into the oven when I got home. This one pot meal makes it an easy clean up on working nights.
Ingredients
4 Peppers halved, seeds removed
1 pound ground meat of your choosing ( i used turkey)
2 Cups cooked rice ( I pull it off before the rice is all the way cooked)
1 Cup tomato sauce
¼ cup parmesan cheese
In a bowl mix meat, rice, sauce and cheese.Spray baking dish and place peppers in dish skin side down.Next spoon in mixture.Cover and place in refrigerator for tomorrow’s meal. You can than cook them at 350 degrees for 45-60 minutes. If you just want to warm them up cook ahead of time and reheat.
