Minestrone Soup

We had our weight loss Support group Holiday party last night and fun was had by all. Everyone brought dishes to share we had gluten free sweet tears, salmon, salsa chili to name a few. I decided to bring my minestrone soup since it is soup weather and this recipe is healthy and GF. Well… as long as you don’t pick out too many chunks of cheese it’s healthy. I can’t remember if we talked about this dish before but here is the recipe again. To jazz it up I put kidney as well as cannellini beans in it.
2 15oz cans diced tomatoes
1 bunch escarole
1 brick pecorino romano cheese cut into cubes
1 can cannellini beans
1 can kidney beans
2 cups chicken broth
1 bunch fresh basil
1 bunch oregano
1 onion diced
3 stalks celery diced
1 carrots diced
Add all ingredients except cheese to dutch oven. Cook on medium until reaches boil. When soup start to boil turn down and cover half way. Cook for 1-2 hours on low. Add cheese and cook for 15 minutes. Enjoy!
