Quinoa Salad IBS Approved!

A lot of patients that I have encountered over the past year are suffering from IBS or IBS like symptoms. These symptoms can affect their lives in a magnitude of ways. IBS approved Quinoa Salad
1 cup quinoa
1 English Cucumber, seeded and diced
2 scallions diced
1/4 C. Fresh Cilantro
2 Tbsp Fresh Basil

Dressing
2 Tbsp olive oil
2 Tbsp lemon juice
1 tsp sugar
Salt and pepper

Boil chicken stock, add quinoa and cook for 12 minutes.While quinoa is cooking whick ingredients to dressing in a bowl. Strain and rinse quinoa well with cold water. next add cucubers, scallions, cilantro and basil. Drizzle dressing over quinoa and toss. Enjoy!
