Roasted Pepper and Chicken Tomato Soup

Fun times at the fair with a garden veggie soup at the end of the day

 

Zucchinis abound in my garden this year! This is a great thing because I get to come up with a lot of interesting recipes. Today I made a pepper soup with garden vegetable and chicken. It was delicious and a hit with my kids and husband. We were at the Ulster County fair all day and needed a quick and easy dinner when we got home. Trying to keep to our budget and eat healthy we didn’t go for the usual pizza on a busy day. Instead I whipped up this soup which took only 1 hour start to finish. I even used frozen chicken because I forgot to take the chicken out before we left.

1 pound chicken breast

1 can crushed tomatoes

4 cups chicken broth

1 onion diced

1 carrot diced

3 stalks celery diced

1 zucchini diced

1 roasted pepper diced

1 cup spinach

½ cup fresh basil

1 tsp dried oregano

Place all ingredients in Dutch oven and cook one hour. Enjoy!
