Rutabaga Fries

The CSA that we belong to is a great project. I love getting new items each week some that I normally would not buy and researching recipes for them. This week two items that we received were pea greens and a rutabaga. The pea greens recipe will be on its way. I have a recipe that I am going to make on Christmas Eve. The rutabaga we turned into fries. This recipe is quick, easy and a healthy low carb alternative to your normal French fries.

1 rutabaga cut into strips
2 tbsp olive oil
1 tsp salt
1 tsp pepper
1 tsp parsley

Toss above ingredients in bowl. Layer on a cookie sheet and place into a preheated oven of 420 degrees. Cook for 10 minutes than turn. Cook for an additional 5-10 minutes. Enjoy!
