Sauted Chickpeas with Roasted Garlic and Spinach

In case you missed the webinar “The Spice of Life” this evening, this is the recipe that was featured. This is an easy vegetarian recipe that can be paired with chicken or fish, or can be served by itself.

Sauteed Chickpeas with Roasted Garlic and Spinach

Ingredients:

1 can chickpeas, drained and rinsed

2 cups spinach

1 tbsp. coconut oil

3 cloves roasted garlic

½ roasted red peppers

1 tsp. turmeric

1 tsp. chili powder

1 tsp. cumin

2 tbsp. fresh cilantro chopped

Directions: Heat oil in skillet. Next add chickpeas, red pepper. Cook for about 2 minutes. Add spinach, garlic and spinach, saute for 3-5 minutes. Serve and enjoy!
