I feel like over the past few months I have become an expert on pan roasting items like chicken and vegetables. They are quick, easy and delicious meals that can be prepared quickly. It also leaves me plenty of time to play with my kids or do the laundry or homework.

Sheet pan Meal

2 sheet pans

2 chicken breast

1 pepper halved

1 onion halved

1 zucchini sliced in quarters

Preheat oven to 400 degrees. Place about 1 tbsp olive oil on pan to cover. Next pound out chicken and salt and pepper it. Next placed all vegetables on tray. Last drizzle with olive oil and again salt and pepper. Cook for 20-25 minutes.
