Spaghetti Squash with Veggie Marinara

It was a great day today at ADAMS fairacre farms. We had a great discussion on Gluten Free and weight loss. I think we could have talked about this for hours. As promised here is the recipe I made today. I hope you enjoy!

Spaghetti Squash
Cut in half and take out the seeds
Drizzle with olive oil, salt and pepper
Roast in 400 for 45 minutes
It should pull like spaghetti with a fork when done.

Veggie Marinara
1 tbsp coconut oil
1 carrot shredded
1 zucchini cubed
1 onion diced
3 cloves garlic minced
1 can crushed tomatoes
1 tsp oregano
1 tsp basil

Heat oil in saucepan. Add onions and sweat, next add garlic carrots and zucchini cook for 3 minutes. Add tomatoes onion and oregano. Cook for an additional half hour. Serve over spaghetti squash.
