Stir Fry a great way to clean out the fridge

I love a good stir fry, now I know that many people cringe when they hear of stir frys and have visions of salt dancing around in their heads but a stir fry can be a quick healthy easy dinner to prepare during the week. This is the option my husband and I usually do instead of ordering chinese food (which will have me in the bathroom and hands swollen within one hour of eating). Its also a great way to add a ton of veggies to your plate with a high source of protein. It can be gluten friendly as well. I use tamari when cooking at home as I find it less salty than regular soy sauce both are providing anywhere from 700-900 mg of sodium in one tablespoon.
We utilize stir-frys in my house right before garbage night. This is when we go through our fridge and start to pull out all the veggies that we have not used during the week and make them before they go bad. We will add ginger, spinach, mushrooms, peppers, onions, broccoli, squash, cabbage really anything that is in the fridge that will not last another day.
I than heat some coconut oil in a pan add veggies and saute. Next I add about 1-2 Tbsp of tamari or soy sauce and saute the veggies for a few minutes. Lastly add ginger, cilantro and sometimes for spice chili garlic sauce. This is a huge hit in my house and everyone normally loves this dish. I serve the stir fry over rice or rice noodles.
