Watermelon, A Healthy Summer Fruit

Watermelon is abundant in the summer time. It is on every grocery shelf from seedless to regular and other colorful varieties. Yet, some people choose to avoid this fruit without taking into consideration its beneficial effect on your health.The myth of this fruit is that it is too high in sugar and water and provides no nutritional benefit. Although it is true that watermelon is 92% water, this refreshing fruit is also soaked with nutrients.
This mouth watering fruit is high in vitamin A, B6, C and has also moved up with tomatoes as one of the highest lycopene foods. Lycopene is important for our cardiovascular health as well as now attributing to good bone health. Lycopene also has anti-inflammatory benefits, so if you’re looking to add some anti-inflammatory foods to your day watermelon is a great choice!
This delicious fruits is also low in calories, providing only 40 calories per cup. So next time you skip the watermelon thinking that it is high in sugar. Know that you are also missing out on the vitamins, nutrients and anti-inflammatory benefits of this Summer fruit.
I love adding watermelon to my salads during summer, to give it a sweet taste. Try this watermelon goat cheese salad.

Watermelon Goat Cheese Salad

2 Cups Endive
2 Tbsp goat cheese
1 Cup watermelon diced
¼ cup cherry tomatoes halved
½ cup cucumber

To pack on the nutrients in this salad I usually add sunflower seed 1 tbsp and top with oil and vinegar.
