Quick Fix


 

Life gets crazy as we all know and even someone’s best intentions to eat healthier can be spoiled by the unexpectancies of life. It’s all about what you do to try and overcome these little glitches that can shape you (literally). Will you be the one to get take out night after night when life is crazy or willyou try and put together a healthier option?
One way to accomplish this is convenience foods. I do not mean Lean Cuisine TV dinners or Kraft mac and cheese either.Grocery markets are getting on board our health food trends and coming up with some healthy items. One craze I am loving is zoodles that are pre-done. Also in the markets are cauliflower rice, spiralized carrots and of course many different type of salads. Next time instead of caving and ordering a pizza try get on board the new health food conveniences at your local grocery store.

Chicken scampi over zoodles
1 pound chicken bread cut into pieces
1 tbsp olive oil
4 cloves garlic
¼ cup roasted peppers diced
1 bag zoodles
⅓ onion diced
Juice and zest if 1 lemon
In a sauté pan heat oil. Add chicken and cook for 5 minutes. Next add onion and garlic. Cook for 3 minutes making sure garlic does not burn. Lastly add lemon juice, peppers and zest of lemon. Cook for 5 minutes. Place zoodles in pan and sauté till heard. Top with Parmesan cheese.
